Here’s what I ate on Monday!
Breakfast – Recently I have been an oatmeal monster, so it is funny to catch me on a day not grabbing a bowl. Phil was off of work on Monday so I was able to go to the gym a bit later. I snacked on a homemade protein muffin first thing in the morning and then ate eggs, avocado and an orange post spin class.
Lunch – I topped a large salad with leftover taco meat, the other half of my baby avocado from breakfast, lots of veggies (hiding under the lettuce) and used organic salsa as dressing.
For dinner we had some pulled chicken that I made in the crock pot earlier in the day. There are a million wonderful and creative chicken recipes I know, but this one is a simple chicken and stock combo that cooks in the crock pot on high for four hours (or low for six or seven hours). It makes a batch of plain shredded chicken that can go into anything during the week (think salads, sandwiches, soups, tacos…endless!). The recipe is also flexible with quantity and cook time, which is great for us as new parents. Mitchell has a pretty consistent schedule, but he can throw a curve ball!
My favorite BBQ place is in Chicago. When my sister and her family lived in the city, we would visit Smoke Daddy and I would order their amazing pulled chicken onto of a salad. It is seriously delicious stuff! I always have a bottle on hand (Phil ordered me a case after making the mistake of finishing off my last bottle one time, ha!) so I can make my own version at home.
In the bowl went mixed greens with tomatoes, cucumbers, carrots, peppers and onions topped with the BBQ chicken and a few croutons.
After Mitch went to bed, we watched Downton Abbey and I had a mug of caramel bed time tea and two cuties. I’m not going to lie, this was me putting forth some serious will power to not grab some wine or ice cream. My goal is to start pulling back on the nighttime snacks and have them only when I am really craving something. Ice cream has been making way too many appearances lately! And I often find I am reaching for them out of habit vs. needing something.
I also drank 2L of water that day…the best way I find to do this is by keeping a 500ml water bottle with me at all times. I take one first thing in the morning and re-fill it with filtered water – so long as I drink four of these I know I’m meeting my goal!
