While the weather is still holding in the 70s, I am ready for all things Fall. We’re planning on a trip to the orchard this weekend and I’m officially stressed over Mitch’s Halloween costume. Every week (and at times day) he wants to be a different character or animal. Something tells me we will be down to the wire with this year’s costume.
But before we’re off and running, I wanted to get into Fall around here. Like, let’s do this! I have plans to whip up my favorite homemade PSL and chili for the game this weekend, and of course, pull out my boots.
Here are five of my favorite pumpkin recipes you can whip up this weekend to get you in the fall mood! And the best part – all you need is a can of fresh pumpkin!
What sounds better on a cool, crisp day than a warm bowl of soup? Recently, I’ve fallen in love with pumpkin soup. It tastes rich and creamy without a lot of ingredients or cream thanks to the texture of the pumpkin. You can also keep this version vegetarian based on your cream choice. Oh, and don’t forget the pumpkin seed ‘croutons’ for a little crunch.
How gorgeous is this dish?! The perfect balance of sweet and savory. I have added herbs and changed up the cheese when I whip up this dish and it is always a show stopper.
Pairing something sweet with my morning coffee is one of my favorite weekend rituals. My mom eats pie for breakfast because she insists there is no difference between pie and a donut. So, you can see where I get it from. Breads, rolls, even cookies (<—can I sneak in one more pumpkin favorite?!) are breakfast options in my book. The pumpkin loaf is a perfect morning sweet or a great afternoon treat. And a tip from me to you – try a little almond butter with the bread sans frosting – heaven!
OK, if you are ready to dive into a love affair, make this cheesecake. It is lightened up, calls for a handful of ingredients and is better than any pumpkin pie out there – no joke. I whip up two to three every Thanksgiving and never have leftovers!
