Good morning, friends!
I am in a great mood today because today is another special one around these neck of the woods. Yup, another birthday! Happiest of birthdays to my best friend KT!
And tomorrow is my sister-in-law’s due date!
I am so excited to meet Baby B. I can hardly believe the day is almost here. We found out we were pregnant at the same time and have shared several preggo moments over the last several months. It has been fun to share the experience with someone who knows exactly what you are talking about! 😉
Last night also marked the end of the semester for Phil. He took his final for his class for his MBA and we celebrated with some of the best BBQ in Michigan, Bad Brad’s!
They are located pretty far away from us, but close to where Phil works. So, after he was done last night, he picked up some dinner and brought it home for us to enjoy. I went with the roasted chicken and Phil had the turkey.
We actually ended up switching our dinner since most of the chicken was dark meat.
Phil is taking next semester off since we are days away from Baby Guster’s arrival! I am really looking forward to having him around at night as we transition into this new phase in our lives.
This morning started with another workout before I headed back to the house for some breakfast. With the season turning, I find my foods reflecting that change. Cooler temps mean the return of oatmeal!
Have you ever met someone who doesn’t like oatmeal? I have, a lot. When I tell people in my coaching sessions that oatmeal is an awesome source of fiber and will keep you full for hours, they look at me as though I asked them to eat liver.
Why do oats get a bad rap? I think it has to do with the mix ins; get them wrong and you can have a bowl of plain mush. But, get them right and you will be an oatmeal lover for life.
This morning I started with a bowl of oats with melted frozen organic berries. If you haven’t done this, please do. Just take some frozen berries and top your oatmeal either before you put in the microwave or on the stove top.
The berries get warm, burst and melt into the oats. Yum.
Rolled Oats with Warm 5-Second Jam
- 1/2 cup old fashioned oats (these are my favorite oats)
- 1 tablespoon chia seeds
- 1/2 cup unsweetened vanilla almond milk (or milk of your choice), plus a bit more if necessary
- 1/2 cup of your favorite frozen berries (you can add one or a mix of berries)
- 1 teaspoon honey
- 1/8 teaspoon cinnamon
- Combine oats with milk or water (your preference) and warm in the microwave or stove top. (Just follow the directions on the package.)
- Once the oats are cooked halfway, add in your berries, honey and cinnamon. Stir and continue to cook.
Yes, this is basically a non-recipe, which is why I love it. Anyone can throw these ingredients into a bowl and have an awesome, filling breakfast that actually tastes good!
