Made with a base of ripe bananas and almond flour, this Super Simple and Healthy Banana Bread recipe is perfect for an on-the-go snack or breakfast. Simple banana bread loaf tastes fantastic topped with a smear of almond butter or coconut butter and comes together quickly, ever with the help of a toddler.
Baking has always been my thing. More than cooking, baking is my time and space to relax and decompress. However, these days, baking has taken a new form as Mitch has become interested in everything I am doing and wants to help.
On Sunday, I knew it was time to put some bananas from the prior week to good use. With a few brown spots, the bananas were at their peak of sweetness and perfect for blending. Mitch joined me in the kitchen and we got to work.
The recipe is an inspiration from Well Plated (one of my favorite foodie blogs). I love this recipe because you don’t need a mixer to make it. You can whisk the egg with a fork, and just stir everything up in a bowl, and then you have easy to make and even easier to eat banana bread!
Oh, and because it comes together in a snap and requires just a few ingredients and tools, it is the perfect recipe for little ones. Mitch helped scoop the flour, cracked the egg, and did a lot of the mixing. But, by far his favorite contribution was the cinnamon. He adores cinnamon and always asks to be the shaker. From oatmeal to eggs, this kid will shake cinnamon on anything – and he doesn’t mess around. Luckily, this recipe is only better with more!
Super Simple Healthy Banana Bread
- 3 mashed bananas
- 1 large egg
- 1/3 cup Greek yogurt
- 2 tablespoons coconut oil, melted and cooled
- 1/3 cup light brown sugar
- 1/4 cup pure maple syrup
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 cup whole wheat flour (or split with almond flour)
- Combine all ingredients except for the flour and mash and mix! Slowly add in flour in batches.
- Preheat oven to 350degrees. Spray a baking dish and pour in batter.
- Top with coconut sugar and sliced almonds.
- Cook for 45 minutes.
- Allow loaf to rest for 5-10 minutes, serve and enjoy.
