With the new year brings a fresh start – often in the form of resolutions. While I do not make resolutions, I am all about goals. Setting goals is a great way to have a long-term vision with short-term steps. And, for me, a goal feels like a process, something you strive towards, where a resolution feels heavy, as though you were wrong before.
The year started on a rough note with back to back bugs leaving me living on toast and tea. I am more than ready to jump-start a healthy lifestyle with more greens and workouts. So, I thought I’d jump back into What I Ate Wednesday and share a peek into my day yesterday.
Meal prep for the win! Breakfast was egg cups that I made over the weekend. Simply combine egg whites, eggs, peppers, red onions, and spinach with a little s&p and bake off in a muffin tin at 350 degrees for 20-22 minutes. Grab 2-3 for a filling, quick meal! I paired the egg cups with two slices of toast (loving this brand!) and a blood orange.
My workday was offsite, which put me less than five miles from Whole Foods. And who am I to miss the chance for a lunch break trip To the hot and cold bar.
I filled up my container with a bed of mixed greens and kale. From there, it was all about the colors: purple beets, yellow peppers, orange carrots. The final touch was a serving of sesame noodles that ended up being the star of the show!
My epic salad was paired with a sparkling water and mini white chocolate macadamia nut cookies. They were the perfect sweet end to the tangy salad.
Yesterday was a bit different for me as my morning workout was cancelled due to a little blond hair boy joining us in bed at 4:30 am. It was actually quite adorable – I heard a faint knock on the bedroom door and a small voice saying, “Momma, big bed please?” I completely caved and pulled him into bed with me. Mitch has never come into bed with us, so I was in heaven when he curled up with me and snuggled for almost two hours. Snuggles trump a workout, so my alarm for the gym was turned off.
I packed my gym clothes and hit up the gym after work. Something I never do because honestly, that is when my motivation is at its lowest. But, after a light week of movement, I pushed through.
Before my workout, I snacked on a pack of almonds and small soy latte.
I arrived home just as Mitch was getting ready for his bath. We had some play time and kisses before going through his nighttime routine.
My stomach was rumbling so I dug into leftovers from Sunday’s meal prep. Butternut squash and turkey chili paired with a side of green beans.
