Good morning, friends! I am really excited for today’s post so lets just jump right in. (Hint: be sure to stay until the end for something fun!)
Oh, you guys don’t hate me, but I did it again. I had a protein pancake.

I know, I know I am possibly obsessed. The other day I had my overnight oats and on Monday I had a smoothie, but no pictures so you’ll have to take another shot of pancakes and berries.
Mixed greens topped with quinoa (prepped on Sunday), chopped pecans, sliced peach and a drizzle of black current balsamic vinegar. The tart vinegar was the perfect combination to the sweet peach and crunchy nuts. I know I eat a lot of salads, but I enjoy playing with all of the flavor and textures – and this salad was perfection.
After my health coaching call ended at 3pm, Mitch and I got ready to head out for the afternoon. I packed a new-to-me bubble water and Larabar. I ended up eating them after we played at the park and clocked a nice walk.
Mitch hasn’t been sleeping a ton thanks to a little tooth rearing its head, so my work hours have been shifting from the day to after he goes to bed. Since I’ve been doing my best to plug away and Phil has been studying for his MBA final, dinners have been short and sweet. On Tuesday we dug into our freezer for a quick option.
Keeping prepped meals and healthy on-the-go options in your freezer is a lifesaver. I’ve never been one for take out; by time you order the food and it arrives you could have made dinner and been on with your night. So, I think keeping options on hand is the way to go. I grabbed these goodies at Meijer during my weekly shopping trip as a standby.
We warmed up our individual burritos with steamed broccoli on the sides. I went with a shredded beef (my favorite protein in Mexican dishes) and Phil had the extra large spicy beef. The size option is such a bonus because I always wonder if Phil gets enough to eat.
We also split the beef and kimchi street tacos that were fantastic! Next I want to try the sweet potato, black bean and goat cheese tacos.
Dinner came together in a snap; just add some avocado, salsa or any other toppings you like. Or, eat them plain, the flavors do not disappoint!
While I love to cook, there are times that its nice to have a night off. But, I am not a fan of food that is fake and made of fillers.
