Good morning and welcome to another day of eats.
I love working out first thing in the morning, that way I ensure it gets done, my energy is actually really high and it sets the tone for my day.
Most mornings I get up and head out with just enough time to down my morning 30 oz before I’m at the gym. But since I got pregnant, I’ve found that a little something in my stomach works best. I ate a few grapes and then waited 30 min before leaving. That way the food had plenty of time to digest.
After my workout, I came home to my favorite breakfast, a protein pancake. I know, predictable.

I spent the morning working away at Panera before my stomach started to grumble. Pretty convenient I was at a spot that serves food, right? And yes, I ate at Panera last Monday, too! I usually eat out once a week and for some reason that day has been landing on Monday.
I was looking for something filling, but light. Panera has a hidden menu that includes fresh, simple salads that are extremely delicious. I went with the Chicken Hummus Power Bowl. The highlight is the jalapeno hummus and fresh lemon – such a great flavor combo that takes a salad to a new level. (I also recreate this at home!)
Dinner was planned for a bit later, so I grabbed a Luna Bar that the awesome people at Clif sent me.
I tried the Chocolate Dipped Coconut flavor for the first time and really loved it (as if there was any doubt)! The bars are on the sweeter side, but I find that helps with my afternoon sweet tooth. Many thanks to Clif for keeping Baby G and me fueled!
Another happy hubby, happy wife meal! A pizza party at home!
Phil LOVES pizza, so I wanted to try my hand at creating my own (healthier) version at home. I made a whole wheat dough and topped it with sauce, cheese, veggies, turkey pepperoni and lots of herbs.
Once it came out of the oven, we topped it with fresh basil and crushed red pepper flakes for some serious flavor!
Sure this is still pizza and some items are processed (hello turkey pepperoni) but knowing exactly what I put into the recipe makes me feel better. Not to mention cooking at home lets me:
- control the quality of the ingredients (organic veggies and sauce, basil from my garden)
- control the type of ingredients (no extra salt, butter or oil)
- feel like a total champ that I cooked a whole pizza start to finish! Oh yes, this momma knows how to knead and rise!
Yup, some times I love to make these fake-out dishes because they satisfy Phil’s cravings and make me feel like a rock star. And he loves them as much as take out! (Or maybe he knows that I don’t do take out and this is as close as it will get.) 😉
That is the thing to remember, these dishes won’t taste the exact same, but there is something to be said for home cooking, effort, and dishes made with love.
And that was my day of eats. I loved every bite from the spicy hummus on my salad to the slices of pizza at dinner that I enjoyed with Phil. No regrets. No extras. Just good food that filled me up and energized me!
