Morning, friends! We made it to Wednesday, which is worth celebrating. However, I always feel that short weeks feel longer than a standard work week. Anyone else?
Anywhoooo…it has been quite some time since I shared a WIAW post. And to change it up and have a little fun, I thought I would share some of my favorite recent eats.
After spin class on Saturday, I was more than ready for breakfast. I decided to treat myself and stopped into the Bucks for an egg white, feta, and spinach egg wrap. While we all know my love for these wraps, the new option of a side of sriracha took this to a whole new level. And let me tell you, I like spice and heat but could only make it through half of this packet. Bonus for it being a freebie.
On Sunday, we visited the orchard and on the way stopped into East Lansing for lunch and to visit Michigan State campus. We were looking for a quick place to feed Mitch when we pulled into town and ended up at Cosi. I have not been to a Cosi in quite some time, but the menu looked delicious so we ordered lunch. My favorite option is a pick two; a salad with roasted sweet potatoes, roasted peppers, avocado and an amazing spicy dressing paired with chipotle pumpkin soup. This meal was so delicious and filling. I am so inspired to recreate both dishes at home!

Last week I picked up prepped Mojito Salmon at Trader Joes. It had an amazing pepper and tomato topping and we served it with roasted brussel sprouts. I am convinced every vegetable tastes better roasted. Who is with me?
Lately I have been rotating snacks (I am going to share my favorite snack options soon. So many great ideas!) but found a favorite with a strawberry smoothie. Just add one cup of unsweetened almond milk, strawberries and protein powder (you can sub this out for Greek yogurt or cottage cheese). It is so refreshing and light.
While strawberries may not be fall fare, I am gravitating towards more seasonal produce. And soups! I have a batch of my favorite healthy chili on the stove as we speak. Nothing is more comforting than a bowl of soup on a crisp day. OK, maybe a glass of wine.
