Hey guys and welcome back to the blog. I know you guys love What I Ate Wednesday posts and thought I’d document my eats from earlier this week. And I have to tell you, not all days look the same around here with this pregnancy. One day I’ll eat one way (lots of greens) and the next day I’ll crave a huge sandwich. But that’s one thing I’ve learned with pregnancy- listen to your body. Not the cravings, your body’s cues. Two different things.
And yes, cravings happen and sometimes I’ll go with it. But meal prep has been saving me to keep my cravings in check and keep me from going off the deep end.
Ok, let’s jump in!
Over the weekend I made a batch of lemon blueberry bars. They’re made of almond flour and a few other simple ingredients. I had a slice with coffee while getting ready for work.
A few hours into work I dug into my latest obsession – Greek yogurt with fresh berries. Give me all of the fruit! I eat this nearly every day at one point or another in one form or another. It’s hitting the spot!
My mid-morning snack held me over until 1:30 when I finally got hungry for lunch. I packed a wrap stuffed with rotisserie chicken, hummus, spinach, peppers and cucumbers. I paired it with a crisp apple because, fruit.
Some days I do well and other days good hits me like a ton of bricks. This day was the later. I was super full and skipped my afternoon snack.
It’s funny, one day I eat like a pro wrestler and others like a bird. Between my appetite, pregnancy symptoms and little one shifting, everyday is different.
Our dinner Friday night inspired me to create a dish with fresh tomatoes and herbs.
I’ve started to grill up extra chicken on the weekend to use in my lunch or as quick dinner options during the week. The cooked chicken was the perfect base for a Mediterranean inspired dish. I sautéed garlic and tomatoes while broiling chicken with fresh Parmesan on top. I mixed my tomatoes with olives, feta and parsley. The flavors were super fresh and with a few quick (and a little random) sides, dinner was served in 15 minutes.
Can’t beat a quick and delicious dinner!
The night was spent per usual – bath and bedtime routine for Mitch before I grabbed some ice cream from our birthday celebration the night before. I’m leaving the brownies for the boys.
While I’m definitely into the sweets this pregnancy, I’m also aware that treats don’t happen every night. A small bite of ice cream can often do the trick!
And that was yesterday’s eats!
