Good morning, friends! It has been a few weeks since I shared a What I Ate Wednesday post, so I thought I’d jump back in today since one, I have a few new meals I’ve been enjoying and two, I actually took pictures! Win!
So, let’s jump in!
The morning started at 5am with a workout at Orange Theory Fitness that was crazy hard. We did a mix of running and weights but rotated every 10-15 minutes, which added a huge boost in my heart rate and I was sweating like crazy.
When I got home, I dug into a chocolate protein pancake. Chocolate in the morning, yes, please. I simply swapped my usual vanilla protein for chocolate and topped it with strawberries for a perfectly satisfying breakfast.
My pancake was satisfying, but I was ready for a snack around 10am. I’ve recently discovered sunflower butter and am obsessed! Once Again organic sunflower butter is my favorite, and I love that I can grab a to-go pack! The flavor is nutty but sweet and complex, much more than your standard peanut butter. I’ve been enjoying drizzling it on apples or celery for a snack.
Lunch was quick and light. Thanks to my snacks, I never get too hungry, so a “dump it all in” salad was the winning ticket. I did just that, took all of the veggies and salad in my fridge and added it to a to-go container. Once I was ready to eat, I topped it with Greek dressing and dug in!
Yes, snack number 2! I dug into carrots and half a cucumber dipped in hummus on the drive home, so I didn’t snap a picture (don’t drive and text/snap). I was feeling snacky and the veggies were the perfect crunch.
Phil was out at a work event, so Mitch and I created our own dinner. I seared a tuna steak and topped a salad with green beans, olives, tomatoes and a hard boiled egg. Nicoise salads are huge in Spain and I ate one every day when we visited Madrid and Barcelona.
When Phil is out, I always whip up a meal I know I love that he is not into. That usually includes salads, popcorn, salmon or just a few eggs. He is all about the meat and potatoes – typical guy.
Overall, my day was filled with veggies, which I love to see! I also noticed that starting my day with a workout definitely got my appetite going. But, being prepared helped me avoid a faceplant into the tub of animal crackers. Although, I did snag a small slice of Mitch’s cake at the end of the day when Phil came home. We relaxed on the couch with a little treat and caught up on the day.
