Morning friends! I hope you’re all staying warm in the east and enjoying the sun in the west. Here in Michigan, we have a light dusting of snow but the temperature is reaching negative numbers with the windchill…brrr.
Yesterday, I stayed home with Mitch and we documented our eats all day. So, let’s jump into the food!
The day started with muffins from Whole Foods. My absolute favorite muffin is the Morning Glory muffin from Whole Foods. It’s packed with shredded carrots, raisins, nuts and spices resulting in a moist and flavorful muffin. Mitch and I shared the muffin with a side of juicy strawberries.
Mitch had an early lunch and I enjoyed mine once he was napping. My lunch was a perfect mix of crispy salad, creamy avocado and a small cup of warm chicken and veggie soup.
You guys, have I mentioned the Everything But the Bagel mix from Trader Joe’s?
I’m slightly obsessed with everything bagels, but not a huge fan of big bagels. The flavor is what gets me. When I spotted this mix on the shelf I scooped it up without hesitation and thanked the gods for hearing my prayers. It’s been added to eggs, avocado, veggies, English muffins (for the breadth experience) and even homemade sweet potato chips. Bomb. Go get some now.
Once Mitch woke from his nap, we pulled out the blender for a snack. In the mix went milk, frozen banana slices, nut butter, avocado, frozen cauliflower and cinnamon. Someone loved his smoothie and slurped it down.
Dinner came together in a snap thanks to a little trick I learned with stuffed peppers. Steam your peppers for 3-5 minutes then stuff and bake. We were digging in within 20 minutes. The warm and heart fish hit the spot (Phil went back for seconds).
The night wrapped with two Justin’s peanut butter cups before calling it a day.
